SEAFOOD  SLIDERS


Bring about 2-quarts of water seasoned with about ¼-cup Old Bay Seasoning to a rolling boil and add about 4-cups fish fillets. When the water almost starts to boil again, turn off heat and let stand for 1-hour or more. The longer the fillets soak in the seasoned water the spicier they will get. Remove fish from water bath and chill thoroughly (several hours or over-night). When ready to prepare the cakes, finely chop the chilled fish with a knife or nut chopper, place in a large mixing bowl and add:

About 1 1/2-cup fine dry bread crumbs

About ¾-cup walnuts process into a fine meal in a food processor

About ¾-cup sweet onion finely chopped

About 4 eggs

About ¼-cup fresh cilantro finely chopped

About 2-tablespoons Worcestershire Sauce

The juice of about ½ of a lemon

About ½-cup Hellman’s Mayo

About 1-tablespoon Table Mustard

About 1-tsp sea salt

About 1-teaspoon ground black pepper

Mix thoroughly, form into slider size patties about 1/2-inches thick and pan-fry using avocado or olive oil at medium/high temp until dark brown on both sides. If mixture is to dry or patties don't stay together add one egg. Serve with Seafood Sauce (below) as an entree or in a sandwich.

 
Seafood Sauce

About 1½-cups Hellman’s Mayo

About ½-cup chopped dill pickle

About 1-clove garlic minced

About 2-tablespoons finely minced sweet onion

About ¼-cup Ketchup

About 1-tsp Table Mustard




Seafood Dip

Bring about 2-quarts of water seasoned with about 1/3-cup Zatarain’s Crawfish, Shrimp and Crab Boil Seasoning to a rolling boil and add about 4-cups fish fillets. When the water almost starts to boil again, remove from heat and let stand for 1-hour or more. The longer the fillets soak in the seasoned water, the spicier they will get.  Remove fish from water bath and chill thoroughly (several hours or over-night). When ready to prepare dip, finely chop the chilled fish with a knife or nut chopper, place in a large mixing bowl and add:

About 1/2-cup finely chopped celery

About 1/2-cup finely chopped sweet or yellow onion

About 1-tablespoons Worcestershire Sauce

The juice of about ½ of a lemon

About 1-cup Hellman’s Mayo

About 1-cup Sour Cream

Mix well and chill. Dip with crackers or veggies, as a sandwich spread or as romaine lettuce roll-up filling.
